Healthy Chicken Salad Sandwiches

Raise your hand if you LOVE chicken salad sandwiches! Me me me!!! I am such a fan of quick easy meals that the whole family can enjoy. This is one of our favorite things to whip up ESPECIALLY if we’ve got that leftover rotisserie chicken in the fridge that we don’t really know what to do with. This is PERFECT for that. It takes about 10 minutes from start to finish if the chicken is prepped, if not, it only takes about 20-25. Here’s how.

Gather and prepare all of your ingredients:

1-2 C shredded grilled (or rotisserie) chicken

1/2 C sliced almonds

1 C grapes (sliced in halves)

1/4-1/2 C chopped celery

1/4 C diced sweet onion

1/4 C raisins or dried cranberries (not pictured)

1 small apple chopped into little pieces (not pictured)

1/2 C paleo mayo

1/2 tsp. garlic powder

salt and pepper to taste

Once you’ve got all your ingredients gathered together it’s as simple as combining them in a big bowl, mixing it up so it’s well combined and adding some salt and pepper until you feel it’s perfect.


I usually add the mayo in last, mostly just to make sure it looks like my other ingredients are well proportioned. 🙂


Now if you’re wanting a lower calorie, low carb option go for the lettuce boats. These are so yummy and so perfect to hold your little bundle of chicken salad. I LOVE it like this! I can eat like 5 and still not feel guilty!

If you’ve got some picky eaters that just “need” the bread, then serve it over a Ciabatta bread roll. These are mighty tasty as well! OR you can also just put a big ole’ spoonful on your plate, or in a bowl and eat it all by itself. Yes, it’s THAT good! My 1 1/2 year old likes it best likes this…like a lot. It’s a disaster. I promise you’ll be sure to please the entire family! Now that’s a meal worth making!
