These are the perfect little side to an Italian meal…or if you’re like me and have zero food in your fridge except a zucchini, some left over marinara sauce and some mozzarella cheese it’s also a perfect “I need to go grocery shopping” meal. Because let’s be real, those meals exist. 😩 We threw this together and it tasted awesome. So, of course I’ll tell you how to do it too! Cooking healthy doesn’t have to be hard or complicated! Now, off to the drawing board to make a grocery list for tomorrow. Heaven help me.
Italian Zucchini Spears

Ingredients
- 1 Zucchini
- 1 tsp Olive Oil
- Salt and Pepper to Taste
- ½ C Marinara Sauce
- ¼ C Mozzarella cheese
Instructions
- Preheat oven to 400 F. Slice zucchini into 4 spears, toss in olive oil, season with salt and pepper and bake for 30 minutes. After baking, remove from oven and evenly spoon some marinara sauce onto each spear. Sprinkle on a bit of mozzarella cheese and broil on high for about 4-5 minutes or until the cheese is melted and starting to crisp. Take them out and enjoy!
