Crockpot Baked Potatoes

I am a lover of the baked potato. My husband, well he’s from Idaho so he pretty much IS a potato. I mean that in the nicest way possible. 😉 We both grew up having roast and potatoes from the crockpot nearly every Sunday, or at least once a week! But for some reason I never really thought to bake my POTATOES in the crockpot as a meal prep hack until now. It’s amazing and so simple!

Here’s what you do. First of all, gather your tators. Next, wash and rinse well, removing any bruised spots, or roots pokin’ out.

After all your potatoes have been washed, simply place them in the crockpot and set them on the “low” temperature. Leave them there for 5-6 hours or until soft and easily pierced with a fork.

Sweet potatoes cook faster, so I tend to go with the five hours (or less, depending on size) for those guys. The big, russet or baking potatoes however, six hours and they come out perfect every time! Now just pair them with your favorite meat and veggie and you’re good to go!

These sweet potatoes were topped with bacon and broccoli. So simple, yet soo good!

The thing  I LOVE about baking potatoes in the crockpot is that you can bake so many at one time, set the dial to low and forget about it for the next 5-6 hours. I usually set a timer on my phone to remind myself to check them so they don’t get over cooked. This has helped with my “Mom Brain” issue. Yeah, it’s a thing. Phone timers have definitely saved me multiple times. Anyway, but I was going to say that another great thing about doing so many potatoes in the crockpot all at once is that you can save them in the fridge and use them for breakfast hash that week. How awesome is that?! All they need is a knife choppin’, stove top action and oil lovin’ and you’re set! Here are some examples:
