So, I was at Costco the other day just doing my regular shopping and spotted these babies! Are they not the CUTEST things ever?! It almost felt like they were at Costco JUST for me. I had to get them and from the moment I put them in my cart my little Aiden wouldn’t stop asking me if he could have one. I don’t think he understands how they work really. Haha. Little kids are so cute. I debated what kind of popsicle we should make first for a while but then (honestly shamefully quick) we decided on chocolate because, well, we love chocolate around here. These were super easy and quick to make. Okay, again, just look at those little astronauts you get to discover as you lick away the day! I just think they are so cute!

Okay, so here’s what you do. P.S. you can find the printable at the bottom of this page, but honestly it’s super easy. In your blender combine 2 ripe bananas, 2 Tbps. Cacao Powder, 1/2 C Coconut milk (from the can), 2 pitted medal dates (or other sweetener of your choice ex: honey, agave…), a dash of salt, and a 1/2 tsp vanilla extract. Blend it all up until creamy and smooth and fill your popsicle molds. Put them in the freezer for at least 3 hours or until you’re POSITIVE they are frozen. Because otherwise you’ll try and pull one out for your overly excited toddler and then crush his dreams because it actually wasn’t ready. Not that I would know… 😉
Also when removing them from the molds you may need to run warm water over them so they slide out easily. AAANNNNDDD Enjoy!!!

- 2 Ripe Bananas
- ½ C. Canned Coconut Milk (full fat is best)
- 2 Pitted Medjool Dates
- 2 Tbsp. Cacao Powder
- ½ tsp. Vanilla
- Dash of Salt
- Combine all ingredients into a blender
- Blend until creamy and smooth
- Pour into popsicle molds
- Freeze for 3+ hours
- When removing from the molds run warm water for easier removal.
