How to Make Cauliflower Rice

I don’t know about you but I’m always looking for ways to sneak vegetables onto my kids plates. Do you see that white fluffy stuff that looks exactly like rice? Yeah…it’s cauliflower. The best part about this grilled Tilapia, cauliflower rice and broccoli dish is that the night I made it my little 2 year old said, “This chicken and rice is so yummy mom! Thanks for making it!” Haha..little did he know. #momwin Am I right?! I’m sure you’ve heard of this by now, but maybe you’re scared to try it because you don’t exactly know how to make it?  Well, let me walk you through it step by step.

The first thing you need to do is find a head of cauliflower! This is kind of an important step. 😉 Go ahead and wash the head, scrubbing off all those yucky germs and bugs.

Cut the cauliflower into floret pieces, as shown in the picture above.

Now, find your food processor. I have a Ninja that works amazingly well. I’ve also tried using my Vitamix blender, but honestly, it works TOO well and I just end up with a sticky, gooey mess. So my advice is to stick with a processor.

Place your florets (about a cup) into the food processor and pulse a few times until it has reached the size and appearance of rice. Remove the cauliflower rice from the processor, transferring to a larger bowl, then add another cup of florets to the food processor to pulse. Repeat this until all the florets have been pulsed and made into “rice.”


This is what it should look like when you’re finished. You can use this in stir fry, for pizza crust, for a nice side, for Hawaiin Haystacks, or anything else you can think of. It’s such a great and more nutritious option over plain ole’ white rice!

You can even make a big batch and keep it in your freezer for those crazy busy nights where you ALLLMOOOSTT just throw in the towel. Steam this on the stove top, add some veggies, season with a little garlic powder, onion powder, salt and pepper and call it good!
