HI!! More summertime popsicles comin’ atcha! I am in LOVE with these cute little popsicle sticks I bought from Costco a couple of weeks ago. If you missed my Chocolate Rocket Pops I posted a few weeks ago you should probably go check them out. They, my friends are delicious! These pineapple little dreamboats are already long gone from the freezer so I thought it was about time I shared them with you all. They are the PERFECT summertime treat!
First of all let’s just talk about the cuteness, because let’s get real sometimes we buy things just because they’re cute. Anyone else guilty? Please say yes. This is the story of my life. I swear. Unless it’s too expensive, haha…that’s the other story of my life…for another day. 😉
These are sailboats. Can you see it?! The popsicle part is the sail and inside is the mast. Unless you are a 2 year old little boy, then they are definitely not sailboats or masts, or whatever else you want to call them. They are swords, obviously. And he wants to play “charge” every single time he finishes his popsicle. Oh boy…everything in that little brain of his turns into a sword. And this is why I always pray for safety in our morning, breakfast, lunch, dinner, and bedtime prayers. Heaven help us!
So the first thing you want to do is dice up a few strawberries, or any other berry for that matter to put inside the popsicles. Really, it’s whatever floats your boat. 😉 (See what I did there. I’m so clever.)
After you’ve diced a few berries, add all the other ingredients into a high powered blender. I used a Vitamix. Which, by the way I LOVE! So, just throw it all in there, blend it up until it’s nice and smooth, then slowly pour it into your popsicle molds being careful not to overfill. You want to leave room for some berries too! Pour a little in, then add a few strawberries. If you still have more room to spare add some more from the blender. You should have enough to make 6 full size pops.
Put the lids on, sticks in, masts in, whatever you need to do to hold those babies together and place them in the freezer for at least 3 hours. Just make sure they are frozen before you try and take them out. I know…it’s tempting.
Once they are frozen you can eat all 6 of them by yourself in a corner of a room because these are 100% guilt free popsicles! Ok, or you could share them with your kids and receive the mom of the day award. Yippee!!!
For real though, to get them out of the molds, run the whole thing under hot water for a few seconds and then it should easily slide out. Enjoy!!!
CCCCHHHHHAAARRRGGGGEEEEE!!!!!!!!
- 2 C Frozen Pineapple Chunks
- 2 C Almond Milk
- 3 Pitted Medjool Dates
- 1 tsp Vanilla Extract
- ½ C Diced Strawberries (optional)
- Pour all ingredients into a blender (except strawberries) and blend until creamy.
- Pour into popsicle molds.
- Drop 5-6 diced strawberry pieces into molds.
- Freeze for at least 3 hours.
- When removing from molds, run the popsicles under hot water for easier removal.
