Honestly, I can’t take the credit for this AH-MAZING idea. In fact I didn’t think of it at all, but I love it and since you’re already here I’ll share the secret to making the famous “sweet potato bun.” You’re welcome. 🙂I love these buns because they are so simple to make, they taste super yummy, and you can use them for whatever you’d like. Here are a couple of examples:
The California Club
- lettuce
- tomato
- pickles
- avocado
- turkey breast
- cheese
- homemade paleo mayo
- mustard
- 2 sweet potato buns
- guacamole
- tomatoes
- homemade paleo mayo
- sliced Aidell’s chicken and apple sausages
- 1 fried egg
The BLT
- 2 sweet potato buns
- guacamole
- lettuce
- tomato
- bacon
- homemade paleo mayo
To make the buns start by preheating your oven to 425 F. Cut 2 large, well rounded sweet potatoes into 1/4 inch rounds and place in a large bowl. Melt 1 Tbsp. of coconut oil and pour over potatoes, making sure to coat evenly. Season with a little garlic powder, salt and pepper. Lay the potatoes flat on a baking sheet and bake for 15 minutes, then flip the buns over to the other side and bake another 15 for a total of 30 minutes (or until tender).
The lazy-man aka busy momma’s version is to stab a sweet potato with a fork a few times, throw it in the microwave for about 5 minutes, take it out, slice it into 1/4 inch rounds, season with garlic powder, salt, and pepper, then sear on both sides in a frying pan so they can crisp up a bit.
Sometimes this is the BEST version…especially in those busy mornings…c’mon, you know what I’m talkin’ about. Don’t tell me I’m the only one who ends up taking 50 hours to get 2 kids out the door in the morning. I tell ya…life is crazy sometimes. BUT when it’s not, use the oven version…it’s a little more legit. 😉 Enjoy!
- 2 Large Sweet Potatoes
- 1 Tbsp Coconut Oil
- 1 tsp. Garlic Powder
- S/P to taste
- Preheat oven to 425 F.
- Cut sweet potatoes into ¼ in rounds and place in a large bowl.
- Melt coconut oil and pour over sweet potato rounds making sure to evenly coat the potatoes.
- Add garlic powder, salt and pepper.
- Mix to coat potatoes evenly.
- Lay potatoes flat on a baking/cookie sheet.
- Bake for 15 minutes, then flip potatoes over and bake the last 15 on the other side until tender.
