This breakfast is SOO simple if you’ve already made my Mexican Quinoa. Whip up some scrambled eggs by placing a little olive oil in your skillet, add your desired amount of eggs and scramble on medium heat until cooked through. Next add a spoonful of the quinoa, a little franks red hot sauce, and slice up an avocado to make it a complete meal! Enjoy!
