Mexican Quinoa Egg Scramble

This breakfast is SOO simple if you’ve already made my Mexican Quinoa. Whip up some scrambled eggs by placing a little olive oil in your skillet, add your desired amount of eggs and scramble on medium heat until cooked through. Next add a spoonful of the quinoa, a little franks red hot sauce, and slice up an avocado to make it a complete meal! Enjoy!

Ingredients
  • 3 Eggs
  • Spoonful of Shanell for Real's Mexican Quinoa
  • Franks Red Hot Sauce (to taste)
  • ½ an Avocado
Instructions
  1. Scramble eggs
  2. Add quinoa to eggs
  3. Sprinkle with a little hot sauce
  4. Slice an avocado and serve next to eggs
